For starters, you need to know the difference between "Gauge" and "absolute pressure". It ignores the gauge atmospheric pressure (pressure only saying what most beyond the normal air pressure) the pressure whatsoever including atmospheric pressure. The 13.3 psi should be noted that a gauge pressure, otherwise, pressure cooker is operating at less than atmospheric pressure [14.7 psi] and therefore would be a vacuum cooking! However, control of the steam tables 13psi (nearest value) gauge, which would be about 246 F. PS be careful, I had a relative who had something to break down with a pressure cooker and ended up re-decorate the walls and ceiling with pumpkin!
